There are two base configuration options for the Mac mini, plus a third Mac mini Server option. The two base models have only a few differences.
Mac mini 2.5GHz Dual-core vs. Mac mini 2.3GHz Quad-core

With only a $200 price differential between these models, the higher-end option isn't a bad deal for a faster i7 processor and the additional hard drive space. I would recommend buying the entry-level model and perhaps upgrading the RAM. You can swap 4GB for 8GB of RAM for around $40 at Apple Sliced Memory
As for the Mac mini Server
, it has a faster i7 processor, two 1TBGB hard drives compared with the one found in the other models, and the same 4GB RAM found in the others. Although the biggest difference is that it includes OS X Server in addition to OS X Mountain Lion.
