Answer:
Yes, you can easily hide an email draft in iOS Mail by swiping down from the top of the email draft. This will hide the message and give you full access to other messages, folders, etc. Once you're ready to resume composing the email draft, tap the bar at the bottom of Mail to bring the message back to the forefront.
